Southern Vegetable Pie

Last night we had a dinner that had my name all over it.  I looked through the Lebonheur cookbook, Key Ingredients, on a mission to try something new.  I decided on the recipe, Southern Vegetable Pie.  It is similar to this one.  I cut the recipe in half and it made plenty for the three of us.  IMO is was great! The guys were giving me a hard time as there wasn't any meat in the dish.  Even so, they enjoyed it too.
This is one of those dishes that Pumpkin would not have touched.  We were joking that if he was home for dinner he would have made a beeline for the pb&j!

Home From School

Buddy waits, watches and listens for Peanut to get home from school.  As Peanut comes in through the garage, he drops a scoop of dog food in Buddy's bowl.  After Buddy gobbles down his meal, he runs to find Peanut.  It is like it is his way of saying thank you!  A few days ago, Buddy met Peanut halfway on the stairs.  He turned around and sat right down.  Yep.  You better believe he got some good pets!

County Championships

The skies opened up just in time for the boys run.  Again, the pictures are out of order, but you get the idea.  The conditions were horrible.  During the entire run, I just kept praying for no injuries.  Peanut took a fall, roll and bounced back up.  It cost him a few places.  But, he finished unharmed.  It was a mess.  The season is winding to an end.  We only have a few more weeks.

My Mate is 48!

I am not sure if he appreciates me blasting his age in the title of this post.  Oh!  Well!  Happy Birthday, Big Guy!  I gave him his gift earlier in the weekend.  I ordered the Humans of New York by Brandon Stanton.  His photos and posts generate discussion between the two of us.  I can't wait to read the book next.

We've got White Bean Italian Pizza on the menu.  Peanut is coming up with some brownie/cake concoction for dessert.

Arkabutla

This week was Fall Break.  It was a nice relaxing week.  Yesterday, the Big Guy took the afternoon off.  We drove down to Hernando, MS to eat lunch at a restaurant that sources locally and has gotten great reviews.  Lunch did not disappoint.  After, I realized we were close to Lake Arkabutla.  I could not resist stopping.  During much of his middle school and early high school years, The Big Guy spent his weekends sailing with his dad on Lake Arkabutla.  It all sounds exciting, but it was normally very hot and there was little wind.  We stopped at the closest boat ramp, not the one used for sailing.  It was nice to hear sailing stories, yet again.  By the time we walked back to the car, Peanut was ready to buy a boat.  In the car ride home, Peanut decided kayaks might be the best option.

We aren't quite sure this is the area of the country to enjoy a sailboat or a kayak.  It just gets so blooming hot in the summer!

Replicas

Replicas of the Nina and Pinta were docked in Memphis.  We went to see them on Sunday.  It was a glorious day.  It felt like we were in San Francisco.





It is amazing how small these boats are.  I can't even imagine crossing the Atlantic in such tight quarters.  There is a current crew of 12 that were heading to Little Rock, AR after they left Memphis.  It was interesting to see.

It was a perfect day for a race.  I think all of the team ran PRs.  Enjoy the pictures of Peanut!
